Recently students got to taste and critique a selection of Aussie wines and cheeses including a Sauvignon Blanc, Moscato, Rose, and Shiraz.
Byron Bay students indulged in a delightful wine and cheese tasting event. Attendees had the opportunity to indulge in a wide variety of Australian wines and cheeses. The event showcased the rich and diverse flavors of Australian wine, ranging from crisp and citrusy Sauvignon Blanc to full-bodied and robust Shiraz.
The cheese selection was equally impressive, featuring creamy and tangy blue cheeses, velvety brie, and sharp cheddar. Guests savored the exquisite pairings of wine and cheese, immersing themselves in a truly unforgettable culinary experience.
We sampled 4 different cheeses
- Brie
- Gouda
- Cheddar
- Blue Cheese
And 4 different wines
- Shiraz (Red)
- Moscato (White)
- Sauvignon Blanc (White)
- Rose`
The students were given a sheet of paper with each wine on it to write down the appearance, taste and aroma of the wine, they also wrote what cheese they paired best with.
The Appearance of Shiraz was a deep red with notes of dark berries, licorice, leather and earth
The appearance of Sauvignon Blanc was a clear/yellow colour with notes of citrus, grass and white peach.
The rose` was had a light pink appearance with notes of strawberry, citrus, melon, and rose.
Finally, the appearance of the Moscato was very similar to the Sauvignon Blanc however was much sweeter. It had notes of orange blossom, peach, honeysuckle and fresh flowers.
The overall favorite was the Moscato, the students loved the sweetness of it. However there were some avid red wine lovers in the mix as well!
It was such a fun afternoon and was an excellent way for our students to start their weekend!

The major grape varieties grown in Australia are shiraz, cabernet sauvignon, merlot, chardonnay, sauvignon blanc, sémillon, riesling, viognier, pinot noir, grenache, sangiovese, mourvèdre and pinot grigio.
Australia’s vineyards and wine regions are in New South Wales, South Australia, Victoria, Western Australia, Tasmania and Queensland.
The most renowned wine regions include:
- Western Australia – Margaret River
- South Australia – Barossa, Coonawara, Adelaide Hills, McLaren Vale and Clare Valley
- New South Wales – Hunter Valley
- Victoria – Yarra Valley, Rutherglen, Heathcode and Mornington Peninsula
- Tasmania
